Frollini autunnali alle nocciole e sciroppo d’acero

Così recita la nota poesia di Ungaretti. Così il poeta ci vuole far comprendere quanto la fragilità umana sia pari a quella della natura stessa. Quanto facilmente riusciamo a cadere, proprio come le foglie cadono in Ottobre. Più volte, io stessa mi sono sentita una foglia. Fragile, inerme, disposta a vacillare di fronte alle avversità della vita. Mi sono sempre piaciuti questi versi che, pur celando un sottile velo di malinconia, riescono perfettamente a rispecchiare le nostre perenni incertezze, i nostri dubbi che se non tenuti a bada, ci impediscono di reagire e di riprendere in mano le redini delle nostre vite. Le foglie suggeriscono una delle metafore migliori sulla nostra esistenza.

Parlando di foglie penso alle foglie di questa stagione, scaldate dal sole tiepido di Ottobre, tormentate dal vento che le separa prepotentemente dall’albero ed infine un turbinio dai colori caldi che percorre traiettorie del tutto imprevedibili fino a posarsi a terra e formare un manto variopinto che quasi nasconde l’erba ancora verde. Non è una fra le immagini più poetiche che esistano? E’ quasi una magia che la natura opera di fronte a noi e alla quale magari non prestiamo troppa attenzione.

 Ecco, ora immaginate una distesa di foglie di zucchero e nocciole che si depositano ordinatamente sul vassoio a fianco di teiera fumante; non sarebbe altrettanto bello?! Eh già! Però per questa volta mi sa che la magia la dovrete operare da soli! E allora mani in pasta!

Con questa dose otterrete 20-25 biscotti piuttosto grandi fatti da una frolla friabile e che racchiude tutto il profumo dell’ autunno. Se preferite, provateli sostituendo le nocciole con mandorle, noci pecan o arachidi. Potete anche congelare la frolla e scongelarla al momento del bisogno. Vi basterà formare i biscotti ed infornarli!

Per 20-25 biscotti grandi

260 g farina 00

100 g granella di nocciole tostate

140 g burro freddo di frigorifero

50 g sciroppo d’acero

90 g zucchero semolato

1 pizzico di sale

2 tuorli d’uovo

1) In un robot da cucina, munito di lame in plastica, inserite la farina e il burro freddo tagliato a tocchetti. Azionate la macchina per pochi istanti fino a quando il composto diventerà piuttosto sbricioloso. Aggiungete le nocciole tritate, il sale, lo zucchero e frullate nuovamente il tutto. In ultimo unite anche lo sciroppo d’acero e i tuorli e azionate il robot fino a che si formerà una palla. Avvolgete l’impasto dei biscotti così ottenuto nella pellicola trasparente e trasferite in frigo per un’oretta.

2) Stendete la frolla con un mattarello ad uno spessore di circa mezzo cm e ricavate dei biscotti con i vostri stampini autunnali preferiti. Adagiate i biscotti su una teglia foderata di carta forno. Continuate così fino a terminare l’impasto.

3) Cuocete i vostri biscotti in forno statico preriscaldato a 180°C per 13-15 minuti fino a quando saranno ben dorati alla base e sui bordi. Lasciateli raffreddare su una gratella per dolci prima di servirli. Spolverateli di zucchero a velo a piacere.

I biscotti alle nocciole e sciroppo d’acero si conservano in una scatola di latta per una settimana. Sono l’ideale per accompagnare il tea o il caffè del pomeriggio o persino anche una golosa cioccolata calda.

Maple syrup and hazelnuts shortbread biscuits

Do you like watching outside the window? I do. I I really do!  A window is a portal into the world! Wherever I am, on a train, on a bus, in my car and even at home I love having a little glipse at what’s going on outside. I love watching nature and weather changing according to the season. Tons and tons of colorful leaves dancing in the air, soaring in the wind and finally falling on the ground and covering everything as if they were comfy blankets. It’s such a poetic thing to see, isn’t it?

Now, imagine! What if loads of leaves made of sugar and hazelnuts fell magically on your baking tray? Wouldn’t be nice? Children would be thrilled to see such a thing! Unfortunately, at the moment we don’t have any way to make this happen but one: baking a batch of biscuits ourselves. But who knows… maybe in the future?! In the meantime, let’s get baking!

For this recipe you’re going to need very few ingredients but the result is a flaky, crumbly, buttery shortbread. The flavours of hazelnuts and maple syrup match perfectly together and they come through nicely. It makes the perfect biscuit to go with a steaming hot cup of tea in the afternoon and even with a luxurious giant mug of hot cocoa. The choice is very much yours!

Ingredients:

260 g plain flour

100 g ground toasted hazelnuts

140 g cold unsalted butter

50 g maple syrup

90 g caster sugar

2 egg yolks

1) In a large bowl, add your flour and the butter. Rub the butter into the flour with your fingers until it resembles bread crumbs. Add the ground hazelnuts, sugar, salt, maple syrup and egg yolks and combine all the ingredients together until they form a dough. Cover it in cling wrap and place it into the fridge for an hour.

2) Take a rolling pin and roll out your chilled shortbread pastry about half a cm thick. Cut our your biscuits with some leaf cookie cutters and arrenge your biscuits on a baking tray, previously lined with parchment paper.

3) Preheat the oven to 180°C/ 350°F and pop in the tray. After 12-15 minutes your shortbread should be nice and golden-brown on the edges and on the bottom. Pull out the tray and place your leaf biscuits on a wire rack to cool down. Sprinkle a little icing sugar on top.

Store your biscuits in air-tight container.
